"There is not a more novel nor a more popular "place to eat" on the entire Southwestern than the Lincoln Highway Cafeteria. There are several distinct features connected with this Cafeteria; first it is a serve-self. You select your own tray, silverware, etc., and advance to the steam-tables, which, by the way, is the second distinctive feature. All foods are kept hot in specially made dishes which rest in hot water and steam. Third distinctive feature; all foods are before you in a tempting array and you select the ones you cannot resist. From the hot foods you pass to the side dishes select what you wish, then to the pastry ad fruits and cakes.

By this time you have a tray "loaded to the guards". Passing on to the "checker" you get your check which given to the cashier on leaving. Everything is "A la Carte", each dish being separate from the others.

Everything is served to tempt the appetite. Soups, Meats, Vegetables, Pastries, Fruit and Ice cream. One is tempted to try the Cafeteria frist on account of the novelty, then on account of the neatness and coziness of the place, and continues on account of the delicious appetizing foots. When you serve yourself you can neither complain of the waiter nor do you have one to "tip"."
