Liberty St. It began as a Restaurant and Confectionery operated by Christ Siriopoulos around 1923 [1]. 1925 found Christ and Michael Siriopoulos co-running the business with Jno Siriopoulos employed as a clerk [2]. By 1928 the Evergreens was under new management. Gust Sakellar and Thos Hatgy operated the restaurant and confectionery together, with help from their families, including Gusts' daughters Ellen and Mary [3].
