By 1928 the Evergreens was under new management. Gust Sakellar and Thos Hatgy operated the restaurant and confectionery together [3]. Gust Sakellar's daughters, Ellen and Mary, served as waitresses [4]. The Evergreens was replaced by a restaurant operated by Julius A Stark by 1935 [5].
