- 1981 - Spiro Matsos learned to make salad dressing in his youth. So, when he opened his restaurant he began mixing and serving his family's salad dressing. [1]
- 2003 - May, Encourage from his family he began producing salad dressing to be purchased in the marketplace. He renovated basement for dozens of empty glass bottles and other boxes with 16-oz containers with "Matsos Greek Dressing With Olive Oil." Spiro Matso delivery a batch to Buehler's using his salad wagon. A 16-oz bottle sold for $3. [2]
