The Evergreens was located at [[E. Liberty St., Wooster, Ohio|140 E. Liberty St.]] It began as a Restaurant and Confectionery operated by Christ [[Siriopoulos (surname)|Siriopoulos]] around 1923 <ref> 1923 Wooster City Directory p. 106 </ref>. 1925 found Christ and Michael Siriopoulos co-running the business with Jno Siriopoulos employed as a clerk <ref> 1925 Wooster City Directory p. 174 </ref>.

Gust [[Sakellar (surname)|Sakellar]] and Thos [[Hatgy (surname)|Hatgy]] operated the restaurant and confectionery together, with help from their families, including Gusts' daughters Ellen and Mary <ref> 1932 Wooster City Directory p. 176, 177 </ref>.  

By 1928 the Evergreens was under new management. Gust [[Sakellar (surname)|Sakellar]] and Thos [[Hatgy (surname)|Hatgy]] operated the restaurant and confectionery together <ref> 1932 Wooster City Directory p. 176, 177 </ref>.  Gust [[Sakellar (surname)|Sakellar]]'s daughters, Ellen and Mary served as waitresses. ref> 1932 Wooster City Directory p. 176, 177 </ref>.
