One of the best equipped and efficiently conducted meat markets of the city and county is that under the management of Mr. John Saal, on the north east side of the Public Square. This business has been established for a period of thirty years, and has since that time held the leading trade. Mr. Saal gives employment to three assistants, and kills an average of 70 head of live stock per month, keeping constantly on hand the best fresh meat with salt and smoked meats, bologna and sausage in their season. He keeps a first-class refrigerator for the preservation of meats, fresh and sweet during the warm weather, and in every particular keeps his rooms and stock clean and in perfect order. [1]
